Cooking with Castroverde: Korean Donuts

March 21, 2018

Ingredients:

Donut:

  • 2 tbsp of butter
  • 1 cup of milk
  • 1 egg
  • 1 packet of yeast
  • 1 tsp of salt
  • 2 tsp of sugar
  • 3 cups of flour

Cinnamon sugar:

  • 3 tbsp of cinnamon
  • 1 cup of sugar

Equipment:

  • Stove
  • 2 Bowls
  • Wooden spoon
  • 2 pans
  • Metal spoon
  • Measuring cups
  • Cutting board
  • Seran wrap
  • Canola oil for frying

Directions:

  1. Put the butter (2 tbsp) in the pan on medium heat until all it melts.
  2. Once it is all melted, take the pan off the heat and pour in the milk (1 cup).
  3. Add the salt (1 tsp) and sugar (2 tsp). Stir until all of the sugar dissolves.

  4. Add the egg and stir.
  5. After the egg is well incorporated, add the yeast (packet). Stir well. Allow the mixture to sit for five minutes.
  6. After the five minutes are up, pour the mixture into a bowl and add the flour (3 cups). Stir the flour into the mixture.
  7. Once it is a homogeneous mixture, wrap the bowl in seran wrap and let it sit for one hour.
  8. After an hour, knead the dough and let it rise again until it double in size. It usually takes 45 min.
  9. Once done, grab the dough and cut it up into 16 sections. Then roll a ball into a long strand. After that, place your index finger in the middle and roll the dough. In the middle, the dough should be smaller than the sides.
  10. To make the twist, you need to place one hand on each side of the stand. Move your hands in opposite direction to create some tension. (Tip: an easier way to do it is to pick the strands on each side and twist to create tension.)
  11. Pick up the strands and bring the strands together. This would cause the strand to make a twist. Twist the two strands even more to make three or more full twists.
  12. Pinch the end of the “braid” to help the shape stay together.
  13. Pour your canola oil and heat to 350ºF. Once the oil is at 350º, put your stove on medium low heat. Start adding some of the dough into the pan.
  14. Flip the dough once it is a golden to dark brown color. (depending on the heat, it usually takes about 3 minutes on each side)
  15. Once the donuts are done, place it inside of a bag and add cinnamon and sugar. Shake the bag until the donuts are done!
