Cooking with Castroverde: Parsnip Fries

Ingredients:

For fries:

  • 1 parsnip
  • Pinch of salt
  • ¼ cup of olive oil
  • Pinch of thyme or rosemary
  • Pinch of ground black pepper

Sauce:

  • Ketchup
  • Or ketchup w/ mayo

Equipment:

  • Aluminium foil
  • Bowl
  • Gloves (latex free)
  • Oven pans

Instructions:

  1. Rinse your parsnip with lukewarm water. This is very important because there is dirt and some chemicals from pesticide that you need to wash off.
  2. After rinsing the parsnip, start peeling your parsnip until it is the exterior skin is all gone. Start cutting the parsnip into fourths.
  3. Once in fourths, cut the parsnip into small strips. They should resemble french fries.
  4. Next, add the cut parsnip, thyme or rosemary, olive oil, salt, and black pepper into a bowl. Put on gloves and mix the ingredients with your hands.
  5. Meanwhile, grab your aluminum foil and wrap it around your oven pan. Put the oven at 400 degrees fahrenheit.
  6. Pour the parsnip onto the pan. Place the pan in the heated oven for 15-20 minutes. The longer you keep the parsnip the more crunch you get. If your oven has uneven heating, place one side of your pan in the back for half the time and then flip to the other side for the other half.
