Cooking with Castroverde: Cucumber Egg Sandwiches

Ingredients:

  • 2 Eggs per sandwich
  • 3 tbsp of mayo
  • 3 tbsp of Dijon mustard
  • 2 slices of Butter bread per sandwich
  • 1 Cucumber
  • Pinch of Salt

Materials:

  • Fork or masher
  • A very sharp knife
  • 2 spoons
  • Cutting board
  • Bowl
  • Paper towel

Steps:

  1. Hard boil your eggs for 8 minutes. After the eggs are done, put them in cold ice water right away.
  2. Cut your cucumber into very thin slices. If you can see a translucent image of your finger through the cucumber, then you cut it correctly.
  3. Place the sliced cucumber on the board and sprinkle salt on it. Make sure no slice is overlapped by other slices. Let that sit out for 5 minutes.
  4. After the 5 minutes, blot the cucumber slices to get any excess water that came up.
  5. Peel the shell from the egg and put it into a bowl. Mash the egg and add the dijon mustard and mayo.
  6. Grab your bread, spread the mashed eggs, and place some cucumber slices. Cut the sandwich into fourths.
